  • 3/4 cup / 185 ml  grated Parmigiano Reggiano or parmesan
  • 8 oz./250g dried fettuccine
  • 3 tbsp. / 50g unsalted butter
  • 1 small shallot
  • 1/2 cup / 125 ml heavy cream
  • 1/4 tsp. salt
  • The grind of black pepper
  • 6-7 oz. / 180 - 200g hot smoked salmon fillet


  • Fresh parsley (optional)
  • Parmigiano Reggiano (extra)


  • At first, take boiling water in a large pot and add the fettuccine there and cook until al dent.
  • Meanwhile, you melt the butter in a frying pan over medium-high heat.
  • Then add the shallots and simmer for 2 minutes.
  • The next is to add the cream and bring to a boil. And you have to reduce heat and simmer for 3 minutes.
  • Remove the frying pan from the heat then stir in the parmesan Reggiano, pepper and salt until the sauce is smooth.
  • Then drain the pasta through the colander.
  • Add ½ cup of pasta water to the frying pan then put the sauce and pasta in that frying pan. Put the frying pan on medium heat again. Cook for 2 minutes so that the sauce and pasta blend well with each other. 
  • Remove from oven and serve. And garnish with extra Parmigiano Reggiano and parsley if desired.

  1. What is called shallots in America is called Eschallots in Australia. These look like tiny onions and are usually a bit long. Tastes better than onions.
  2. The Parmigiano Reggiano that I mentioned in the recipe is made only in Italy. This is a kind of parmesan. The taste and nutritional value are higher and it is more expensive than parmesan cheese. You can use this as an alternative to parmesan cheese. 
  3. Subtract 1 minute for al dente because the sauce will continue to cook later. The fettuccine packet says to cook for 12 minutes but you cook for 11 minutes.
  4. You can make this pasta using hot smoked salmon if you want. You can buy cooked hot smoked salmon from the supermarket. Otherwise, you can make it with ordinary cooked salmon. To do this you need to coat the salmon with salt and pepper and heat the oil in a scale over medium heat and cook the salmon there for 8 minutes or until cooked. Then you have to flake the salmon and use per the recipe
  5. This recipe requires a deep fry pan because the pasta is tossed with the sauce to emulsify. And if you don’t have a deep frying pan, you can use a very large pot.
  6. The sauce should be smooth and a thin film should be stuck with each strand. Do not use too much sauce so that the pasta does not sink into the sauce. If the sauce becomes too much sticky then you will feel that you are cooking too much. So you need to some pasta water and later you will see it coming back smooth again. 
  7. This recipe is made for 3 people, if you want to make it for 6 people, I recommend double the recipe.
